3 Day Weekend

I hope you all had a wonderful weekend! And I hope you all took a moment to think about all the men and women who serve our country and work to protect our freedoms. Thank you.

Friday I had an eye doctor appointment. I had some issues with my old practice and wanted to try a practice just down the street from us. No can do. Our insurance changed, and now doesn't cover very much, or very many doctors in the area. I found one, and while she wasn't the most personable doctor, she gave me a great prescription. I finally feel like I can see the way I'm supposed to. Yay!

After the appointment I drove home to pick up the boys and we went out to dinner at Pilot Pete's. We got a decent view of the runway, which kept Harry happy the entire meal. Pilots fly in from all over the midwest just to eat dinner at the restaurant, and they were coming in droves on Friday. It was a really fun meal :).

Saturday and Sunday we did a little shopping and playgrounding, a little of this and that.

Monday we went over to my dad and stepmom's for the afternoon. It was hot and muggy and perfect for playing at the splash park. It was our first visit of the season. Harry loved splashing in the puddles the water jets made, but  hated getting the water in his face. Every time that happened he'd run over to the playground, play on the jungle gym for a few minutes before heading back to the water.

His swim trunks and rash guard both still fit from last year!

We were at the park for over an hour before heading back to the house to hang out with the dogs. It always takes Harry a bit to warm up to them (did I ever mention they got another dog? They did a few months back- a rescue. Cute little doberman mix.), but he always has fun. Yesterday he kept feeding them potato chips.

When we got home we turned on the AC for the first time and I whipped up some sandwiches using tomatoes Red Gold was kind enough to send me.

The company sent me a bunch of their diced tomatoes along with recipes for different aiolis. Aioli is flavored mayonnaise that can be used as a sauce, spread or dip. I wanted to mix up all of the flavors, but I settled on the tomato garlic aioli for our sandwiches.

It was delish! A nice alternative to plain old mayo that paired well with turkey and provolone. We have a lot leftover that I'm sure will end up on my plate at lunch today.
