Some Healthy Meal Options

Healthy and easy! First up are English muffin pizzas.

I used Thomas' Triple Health English muffins, tomato paste, one shredded Weight Watchers string cheese and some canned mushrooms. Put the pizzas in the oven at 350 degrees for about 12 minutes. Two pizzas (one English muffin) are four Weight Watchers points.

This next one is microwaver's dream.

I've "made" this turkey meatloaf a few times now. It's nothing special but we think it tastes pretty decent. We estimated that half a loaf (it's really not that big) is seven WW points. Last time we had the meatloaf I paired it with some steamed broccoli.

Since learning how to steam broccoli it has become one of my favorite veggies. I used to just make frozen broccoli, which tastes completely different.

I never followed up with our challenge to eat out less we imposed on ourselves back in January. We did really well and only ate out on Friday nights. Ant finally came around and agreed with me that we'd been eating out too much so we're going to keep with it. Every once in a while we'll probably go out during the week but we definitely won't make it a habit like it was.
