My First Freezer Meal

Today I started making freezer meals for when little man makes his appearance. And I must say, today's attempt was a rousing success! After our doctor's appointment today Ant and I went grocery shopping and got ingredients for four different recipes from the Weight Watchers cookbook: chicken and black bean chili, broccoli with garlic, smoky turkey chili and grilled lemon chicken.

The broccoli and lemon chicken are just for dinner this week, but both chilies are for freezing. Tonight I tried my hand at the chicken and black bean chili.

Ingredients
The original recipe doesn't call for any celery, but I thought it would be a nice addition, so I chopped up four stalks and added it to the mix. I also decided to only add one red bell pepper since I'm not the biggest fan of the vegetable.

The chili cooked up pretty fast and we had dinner ready in about an hour.

It turned out great, I highly recommend this recipe! I wish it yielded a bit more chili, though. Ant and I each ate one bowl for dinner and we probably only have two or three more servings to freeze. I will definitely be making more of this chili, and will probably alter the smoky turkey chili recipe a bit to mimic the flavor of this one. And for those of you interested, the chili is worth seven Weight Watchers points per serving.

  3. I cooked a boat load and froze everything when I changed jobs in January. I even put those plastic shelving racks (made for closets or cabinets) in the freezer to maximize storage space. Also, you can put your soup in a freezer zip-lock bag and store them vertically, for more space :)

  5. Nice. We love chili and what a great freezer meal for the winter! I'll probably just make our recipe in a big batch and freeze portions! I still haven't looked up any other freezer meals...and I guess I better do it soon because I am going to run out of time if I don't.
